The variety or population of organisms in a certain place depend on their environment and how they adapt, like the hares and their fur color.

If the grey hares are being hunted and eaten, the only hares that are left to reproduce are the white ones, causing the hare population to be mostly or completely white.
Now, there will be some grey Arctic hares but maybe they haven't changed their fur color yet or it only changes to that color, but still, in most environments a minority of their population will be different, making it more difficult for those ones to survive.

And with time, less and less of those different organisms will remain, increasing the population of those who are fitted for that place! Wow, the same frase already says it, survival of the fittest.
