- The year was 1809 and the place was France.
- What are we going to do with all of these apples?! I don't want them to go to waste.
- I'll call my neighbor, Nichoulas Appert. He's always coming up with new ideas.
- As it turns out, Nicoulas Appert has been experimenting for the past decade, trying to find a process that works to preserve food for army and navy use, called canning.
- So, I've got a whole lot of apples this year and I'm not sure what I'm going to do with them. I was thinking about making applesauce. And I've heard, you've been working on a thing, canning? How does it work? What is it?
- It's a very intersting process. You put the food in a jar and heat it up in a water bath, to a temperature that kills bacteria. When it cools, a vacum seal is formed which prevents bacteria from getting in. This will stay fresh for years to come.
