- Mom, what is stock? I'm not familiar with it.
- Stock, is a savory cooking liquid that forms the basis of many dishes, particularly soups, stews and sauces. Making stock involves simmering animal bones, meat, seafood, or vegetables in water or wine, often for an extended period of time.
- Chicken stock or broth can be used for all sorts of delicious dishes, not just soups and stews. It's a very useful ingredient that brings extra flavor to a recipe. Enough with the questions, okay? Let's proceed with the making.
- But, what can we do with it?
- I already prepared the tools and equipment needed, and now were going to prepare the ingredients.
- First, we'll need 4-5 kg of chicken bones, rinsed and cut in 3-4 inches. We will also need a liter of cold water.
- For our Mirepoix, we will mix a chopped 450g of onions, 16 tbsp of carrots and celery. And for our bouquet garni, we'll put 1 dried bay leaf, 1/4 tsp of dried thyme and peppercorns, 6-8 stems of parsley and 2 whole cloves in a cheesecloth.
